the first one was tough but the second one was so much fun. i am glad i pushed myself today.

here are my food highlights for today.

Barney's almond butter is amazing. so delicious, best i have tried so far.

today i made my ground beef/turkey mix for the week. we had lettuce cups tonight with this mixture. i added chopped hard boiled egg, diced green olives and cranberries. i also made an italian dressing to top it off. it was fantastic.

i tried well fed's toasted coconut chip recipe for a snack. here it is

Caramelized Coconut Chips

Ingredients:
1 cup unsweetened coconut chips
1/4 teaspoon sea salt
pinch cinnamon
Directions:
1. Mix the sea salt and cinnamon in a small bowl and set aside.
2. Heat a non-stick pan over medium-high heat for about 2 minutes. Add the coconut flakes and distribute evenly so they form a shallow layer in the bottom of the pan. Stir frequently – they begin to crisp and turn brown pretty quickly. This step took me, like, 3 minutes maybe, so pay attention! When the flakes have reached an appealing level of toastiness, remove from the heat.
3. Sprinkle the hot coconut flakes with the salt-cinnamon blend and toss until evenly seasoned. Allow to cool, then store in an air-tight container.

i finally replicated the mexican fruit cup that i love and it's probably something i could have everyday.

today was my perfect day of a great workout with healthy, delicious food to satisfy me. i am loving this challenge and still am thinking it will continue beyond the 21 days.

are you being challenged? do you notice any differences?

  1. your fruit looks delicious! where did you buy the almond butter? is it better than the freshmade at sprouts? less fat?

  2. you can find Barney's almond butter for around $9.99 at most health food stores (Sprouts, WF, Windmill). I don't think it's as healthy as pressed almonds since there are no other ingredients in the spread. I do think it's worth the treat of this creamy deliciousness though. Let me know what you think.
