yesterday i defrosted my wild salmon and bought arugula and romaine lettuce. i knew i wanted to use those ingredients and needed the right salad dressing for it. i adapted this one and made it my own.
1/4 cup balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon honey
1/2 teaspoon salt
Freshly ground black pepper
1 clove garlic, minced
1/2 cup extra-virgin olive oil
In a small stainless steel or glass bowl, whisk together the vinegar, mustard, honey, salt, pepper, and garlic until it's all mixed together. Place in refrigerator until ready to use.
I added the romaine, arugula, 2 hard boiled eggs, tomatoes, kalamata olives, and sunflower seeds.
For the salmon i marinated it in tamari, orange juice (one fresh squeezed orange) and a teaspoon of honey. I was only able to marinate the salmon for about 45 minutes, we usually do this for 12 - 24 hours. we always grill our salmon but last night i broiled it and it came out just as good. broil for about 10 minutes, the first 5 minutes were not on the top shelf of oven but more in the middle and the last 5 minutes I moved it to the top. Make sure you add all the juices from your marinade to the pan along with the fish.
