i'm so excited that i am (FINALLY) feeling better and back in the kitchen and the gym. i once read that it takes 6 months to get in shape yet only 2 weeks to get out of it...YIKES! since i was out for almost a whole month i've got a lot of catching up to do. i am ready for the challenge and slowly working out 2 days on one day off. i can feel how i have lost my speed and strength but i am sure with consistency and determination i will back to my regular speed and slowly climb towards my small weekly goals.
this past month i have been sick twice with strep throat and my oldest on a TWO WEEK spring break i have lagged in the kitchen. yesterday i spent most of my day in the kitchen chopping, cooking and cleaning loads of veggies, fruits, preparing my lean meats and boiling eggs for the week. last night i baked paleo muffins for Peter and i and today I am going to make these morsels of deliciousness.
these muffins are so delicious and an easy grab when running out the door in the mornings.
blueberry lemon muffins by Diane Sanfilippo
1/2 cup butter or coconut oil, melted
1 tsp pure vanilla extract
1/4 cup grade B maple syrup (I used 100% pure maple syrup)
1 lemon, juice and zest
1/2 cup coconut flour
1/2 tsp sea salt
1/4 tsp baking soda
1 cup fresh blueberries
Preheat oven to 350 degrees. Whisk together the eggs, butter or oil, vanilla, maple syrup, and lemon juice/zest.
Sift in the coconut flour, salt, and baking soda. Once incorporated, fold in the blueberries. Line a muffin tin with parchment paper baking cups and fill each about 1/4 to 1/2 full (makes 12) Bake for approximately 30-35 minutes.
